Bariatric Recipes of the Week:
Chicken Sandwich
with Cucumber and Mascarpone

Add a little zip to your next chicken sandwich!


  • 1 Tablespoon Mascarpone*
  • 1 small sourdough loaf (~ 1oz.) sliced into 4 pieces
  • 1/4 cucumber,sliced
  • 2 ounces turkey or chicken deli meat
  • * Note: Mascarpone is an Italian cream cheese that tastes more like sweet cream than cream cheese. It's OK to substitute regular cream cheese if you prefer.


  1. Spread Mascarpone on bread.
  2. Top with cucumber slices, then turkey or chicken.
  3. Serve with tomato slices on the side.

216 calories, 25 grams carbohydrate, 15 grams protein, 6 grams fat, 4 grams sugar, 2 grams fiber

Note: If you have difficulty tolerating bread, try toasting the bread first. If that doesn't work, simply roll the turkey, mascarpone, and cucumbers in a lettuce leaf "wrapper."
