Crunch Cakes

These crunch cakes are a great alternative to ice cream sandwiches. Guests will love them too!


  • 8 mini rice cakes (flavor or your choice: chocolate, caramel, etc.)
  • 2 tablespoons Cool Whip Free


  1. Spread 1/2 Tbsp. Cool Whip Free on 1 mini rice cake.
  2. Top with a second mini rice cake.
  3. Repeat with remaining rice cakes.
  4. Freeze.

Makes 1 serving.

Serving size = 4 mini rice cake "ice cream sandwiches"

Per serving: 70 calories, 15 grams carbohydrate, 1 gram protein, 1 gram fat, 6-7grams sugar.
