Bariatric Recipes of the Week:
Crustless Quiche

This crustless quiche is one of my favorites.


  • 4 Large eggs
  • 1/2 pkg. frozen spinach thawed, drained
  • 1 1/2 cups low-fat cottage cheese
  • 1 cup shredded cheese (mozzarella, Swiss, or pepper jack)
  • 1/3 cup chopped sweet onion
  • 1/3 cup chopped turkey or ham
  • 2 Tbsp. grated Parmesan cheese


  1. In a medium size bowl, mix all ingredients except for the Parmesan cheese.
  2. Pour into an 8 inch pie pan. (Note: Can also divide evenly between 8 muffin cups.)
  3. Sprinkle with Parmesan cheese.
  4. Bake at 325 for 40 minutes.

Makes 8 servings.

Per serving:
130 calories, 15 grams of protein, 7 grams of fat, 4 grams of carbohydrate, 500 mg sodium.
