Bariatric Recipes of the Week: Easy Crockpot Chicken
These easy crockpot chicken recipes are a time-saving way to have a hot meal waiting for you when you walk in the door. Use these basic crockpot instructions and simple recipes to get you started. - Always fill crockpot at least half full, but no more than 2/3 full, or the cooking time will be affected.
- Always cook with the lid on.
- Most crockpots have two temperature settings: low is recommended for slow, all-day cooking. High can be used to prepare foods more quickly. An hour on high is equal to 2 - 2 1/2 hours on low.
Easy Crockpot Chicken Recipes:Chicken Marinara - 1 1/2 pounds skinless chicken breasts or thighs
- 1 small jar (26-28 ounces) reduced sodium marinara sauce
- Fresh tomatoes, onions, mushrooms (optional)
- Combine all ingredients in crockpot.
- Cook on low heat for 6-7 hours.
- Add fresh vegetables, if desired, and cook for 30 minutes more.
Makes 6 servings. Per serving: 270 calories, 35 grams protein, 3 grams fat, 25 grams carbohydrate, 440 mg sodium, 2 grams fiber BBQ Chicken (or Beef) - 1 1/2 pounds skinless chicken breasts or lean beef
- 1 cup BBQ sauce
- 1 sliced onion
- Combine all ingredients in crock pot.
- Cook on low heat all day.
- Before serving, shred the chicken or meat by using two forks in opposing fashion across the grain of the meat.
Makes 6 servings. Per serving: 180 calories, 23 grams protein, 5 grams fat, 10 grams carbohydrate, 205 mg sodium, trace fiber Chicken (or Beef) Machaca - 1 pound skinless chicken breasts or flank steak
- 1 cup prepared salsa
- Combine all ingredients in crockpot.
- (If using flank steak, score it by cutting it lightly across the grain.)
- Cook on low heat for 6-8 hours or on high heat for 4-6 hours.
- Before serving, shred by using two forks in opposing fashion across the grain of the meat.
- Return the meat to the crock pot and add more salsa if desired.
- Continue to heat until ready to serve.
