Bariatric Recipes of the Week: Easy Deviled Eggs
Easy Deviled Eggs Ingredients: - 1 dozen eggs
- 3/4 cup prepared lowfat hummus
- paprika
Directions: Prepare hard boiled eggs as follows: - Place eggs in an empty pot.
- Fill pot with enough cold water to completely cover eggs with about 1 inch water over them.
- Cover.
- Over high heat, bring the water to boiling.
- As soon as the water boils, remove pot from heat and let sit, covered, for 10-15 minutes.
- Drain, then rinse eggs under cold running water or in a bowl of ice water.
- Let sit for a few minutes until eggs are completely cooled.
- Peel under cold running water.
Next: - Cut each egg in half and remove yolk.
- Fill each half with 1/2 Tbsp. hummus
- Sprinkle with paprika.
Makes 6 servings. Serving size = 4 halves Per serving: 80 calories, 5 grams carbohydrate, 7 grams protein, 3 grams fat Eat with a small piece of fruit for a well rounded snack.
