Easy Deviled Eggs

Easy Deviled Eggs


  • 1 dozen eggs
  • 3/4 cup prepared lowfat hummus
  • paprika


Prepare hard boiled eggs as follows:

  1. Place eggs in an empty pot.
  2. Fill pot with enough cold water to completely cover eggs with about 1 inch water over them.
  3. Cover.
  4. Over high heat, bring the water to boiling.
  5. As soon as the water boils, remove pot from heat and let sit, covered, for 10-15 minutes.
  6. Drain, then rinse eggs under cold running water or in a bowl of ice water.
  7. Let sit for a few minutes until eggs are completely cooled.
  8. Peel under cold running water.


  • Cut each egg in half and remove yolk.
  • Fill each half with 1/2 Tbsp. hummus
  • Sprinkle with paprika.

Makes 6 servings. Serving size = 4 halves

Per serving:

80 calories, 5 grams carbohydrate, 7 grams protein, 3 grams fat

Eat with a small piece of fruit for a well rounded snack.

For variety, use flavored hummus (roasted red bell pepper hummus, eggplant hummus, roasted garlic hummus, etc.)
